Flavour Profile

Fragrant oak, smooth mocha, brandy snaps and fruit compote. Revealing scorched red fruit, almond fudge and rich chocolate. Powerful yet perfectly balanced.

Nose

:

Stewed plums steeped in wildflower honey, scorched orange and roasted pecans dusted with delicate cacao.

Taste

:

Dark chocolate over sun-drenched blackberries, balanced by caramel fondant and perfectly charred peaches touched with refined peat smoke.

Finish

:

Old oak deepens into burnt maple syrup, with sticky toffee pudding and toasted sesame brittle leaving a lasting warmth.

Flavour Profile

Dark fruits, caramelised sugar, golden raisins, chocolate and silky mocha. The nose offers dark fruits and caramelised brown sugar, leading to silky mocha and finishing with brandy snap sweetness fused with delicate Tasmanian peat smoke.

Steeped pears in aged dessert wine, amber raisins, caramelised Demerara sugar and a whisper of salted macadamia.

Taste

:

Lush plum preserve folded through chocolate sauce, with buttery croissant layers and a drift of earthy peat.

Deep fortified oak warmth lingers through spiced golden treacle, as candied quince and umami leave a velvety depth.

Description

Based on the original recipe from founder and Pioneer Bill Lark, and a whisky home to countless awards and international medals. Double-distilled & aged in a considered selection of small casks, this is a labour of love steeped in heritage. The benchmark for Tasmanian Single Malt.

Toffee apple with crisp citrus and custard, with time a subtle floral oak reveals itself.

Fruity malt and rich plum pudding, with developing apple crumble and red berries.

Lark Tasmanian Peated

Description

Tasmanian Peated shows that where there’s smoke, there’s feeling. This is a new frontier, our island’s own peat bog & post malt smoking process, creates a lightly peated whisky for a bold palate. A delicately smoky dram to ignite the senses, best enjoyed by anyone, any way they like.

Earthy peat intertwined with a delicate floral character and sea spray.

Floral peat develops amongst dark chocolate and oyster shell, with hints of coffee and marmalade.

Lark Chinotto Citrus

Description

Inspired by the pioneering spirit of Tasmania, where risk is in the water. Finished in casks hand seasoned with vibrant chinotto citrus. Candied citrus peels, vibrant cola and buttery malt developing towards soft orange custard with a dusting of cinnamon.

Lark 1911 Para Vintage Tawny Cask

Description

This exceptional Single Malt Whisky is finished in a single barrel that recently held Centennial Collection Tawny, preserving a precious parcel from the 1911 vintage.

Creamy chocolate with biscotti and subtle kola nut rounding out the event.

Taste

Rich fruit cake and caramel on arrival, with hints of blackcurrant and developing lychee.
